Super Quick Low Carb Cheesecake with Mandarin Oranges


I had to come up with a dessert to bring to a training meeting recently and this is what I brought.

In a bowl, combine:
1 envelope Knox gelatine
12 packets Truvia sweetener
1 cup boiling water
Stir it occasionally, allowing the gelatin to dissolve, for about 5 minutes

Meanwhile, in a mixing bowl with an electric mixer on medium speed, combine till fluffy:
2 - 8 ounce packages cream cheese, softened
1 teaspoon vanilla

Beat the gelatin mixture into the cream cheese mixture until they are completely combined. The mixture will be very runny at this point. Pour it into 9" pie pan and chill it for about 20 minutes.

Drain the juice from:
1 12-ounce (approximately) can mandarin oranges, juice packed if possible

Place the oranges on the top of the dessert in a decorative fashion. Chill the cheesecake until it is firm, for about 3 hours.

Optional: You could use a baked low carb pie crust and use this for the filling.

Serve and Enjoy!

Sharron's World Famous Chewy Jumbo Chocolate Chip Cookies

Hi,

This recipe has never been published by me before, so here goes!  It is most definitely NOT low carb, gluten or sugar free.

Preheat the oven to 375F.

In a large bowl, combine:
4 1/4 cups flour (whole wheat pastry, preferred)
1 teaspoon baking soda
2 teaspoons baking powder

In a mixing bowl on medium speed, combine until creamy, about 2 minutes:
1 1/4 cups sugar (organic preferred)
1 1/4 cups firmly packed brown sugar
1 1 /2 cups butter, softened

Add and mix another minute or so till well combined:
2 eggs
1 tablespoon vanilla

Gradually add the flour mixture on low speed, fully incorporating each addition before adding the next.

By hand or with a paddle, add:
2 cups chocolate chips ("extra special dark" preferred)

Use 1/4 cup measure or scoop and place cookies approximately 2" apart on parchment lined baking sheets. Bake the cookies until they are just becoming golden. Remove them from the oven and allow them to rest on the pan for about 2 minutes or until they are able to be transferred. Spread paper towels covered with wax paper and place the cookies on it to cool. Store the cookies once cooled in air tight containers with paper towels or wax paper between the layers.

This is most definitely not a low carb recipe :)

Nuts N' Bolts Snack Mix Recipe

Hi,

This is not a low carb recipe, but rather just a snack mix I like to have on hand for kids and company. This recipe makes a double batch.  It is also NOT gluten free.

Melt 1 cup butter in a small saucepan over medium heat. Add to the melted butter:
1/4 cup Worcestershire sauce
2 tablespoons seasoning salt
1 tablespoon total from the following: Rosemary, garlic granules, thyme, celery seed, basil
Set the mixture aside.

In a large bowl mix:
12 cups "cereal" from the following: Cheerios, Chex, pretzels, chow mein noodles, Cheezits, Mini Shredded Wheat, etc.
3 cups peanuts

Pour the melted butter mixture over the cereal mixture and stir well. Pour onto a large baking sheet with a rim and bake at 250F for about 1 hour, stirring every 15 minutes.

Alternate "rush method:" Pour the coated cereal mixture into a 9"x13"x2" baking pan and cover with foil. Bake at 350F for 20 minutes. Pour the baked mixture onto a large baking sheet with a rim and bake an additional 5 minutes uncovered at 250F to crisp.

Store tightly covered at room temperature.

Salisbury Steak Recipe

Hi,

I wanted to do something different with ground beef and found Salisbury Steak recipe.  I modified it and this is what I came up with.  It is neither gluten free nor low carb.

2 1/2 pounds regular ground beef
8 ounces mushrooms, finely chopped (optional, but not really!)
1/2 cup sweet onion, finely chopped
3/4 cup whole rolled oats 
2 eggs
1 can cream of mushroom soup (you could substitute 1 cup of sour cream or yogurt)
1 tablespoon prepared brown mustard
1 tablespoon Worchestershire sauce
1 1/2 teaspoons seasoning salt
3/4 teaspoon lemon pepper
3/4 teaspoon basil

Combine all of the ingredients in a large mixing bowl.  Mix them together by hand or with an electric mixer until the consistency is uniform.  Shape the meat mixture into patties and place them on a large baking sheet and bake them at 350 for about 20 minutes or until they are done.  Alternatively, they can be fried or frozen for later use once made into patties.  Serves 8.

Salt & blood pressure & my regimine

Yesterday I had a lot of salt -- salted sunflower seeds, lunchmeat & soy sauce. I had carbs, but I think the salt was the bigger issue. My blood pressure was up 159/90 this morning and I was bloated again.

I took my apple cider vinegar, molasses, cinnamon & honey and also dug out a "natural water pill" I had in the drawer and took one of those. It has asparagus and other stuff in it. I tried to get more fruits and veggies into me and watched my "table salt" (not sea salt or apparently soy sauce -- they seem to be ok. It is the refined stuff that is bad!) All worked together because my blood pressure was down to 137/75 this evening again. Woot woot!

I fixed some delicious Barbecued Smoked Salmon this evening. Here's what I did:

I seasoned 1 salmon, filleted with lemon juice, Old Bay seasoning, my special seasoning salt, lemon pepper and dried minced garlic (fresh would have been great!)

My husband had the charcoals nice and hot and I put 4 sprigs of fresh Rosemary on the coals just before we put the fish (skin side down) onto the BBQ grilling rack.

I also had some fresh asparagus. The ends were snapped off and the stalks were sprayed with cooking oil spray. Then I generously seasoned them with my seasoning salt and lemon pepper. They went onto the grill at the same time the salmon did. Note: Be aware of which direction the slats are on the grilling rack! I accidentally lost a couple of asparagus because I put them on the wrong way -- Du-uh!!

Cook with lid closed.

The salmon was about 1" thick, so it was done very quickly -- about 15 minutes. We served it with tartar sauce. The tartar sauce is simply mayonnaise, chopped dill pickles, dried minced onion and lemon pepper.


It was all very tasty and nutritious too!!

No Bake Cookies! Low Carb, of course!

No Bake Cookies, Low Carbed

Makes about 34 cookies.

It is quick, easy and yummy! A real winner.

1/2 tablespoon SteviaPlus®
24 packets sucralose
1/3 cup cocoa powder
1/2 cup yogurt or kefir (coconut milk or cream would also work)
1/2 cup butter
1/2 cup creamy peanut butter
3/4 cup unsweetened coconut1/2 cup flax seeds
1/4 cup milk and egg protein*
1 cup coarsely chopped almonds

*Note: Milk and Egg Protein has been, at least temporarily discontinued at Trader Joes

1. Combine the SteviaPlus®, sucralose, cocoa powder, yogurt and butter in a medium sized sauce pan. Stir while heating over medium heat. Allow the mixture to come to a boil and boil for about a minute.
2. Remove the cocoa mixture from the heat and add the remaining ingredients, stirring well.
3. Drop the dough by teaspoonfuls onto waxed paper and allow the cookies to cool for approximately one hour at room temperature. Enjoy!
